The 21 leaves
During the sixteen offerings, Ganpati receives 21 kinds of leaf, the patri, each offered with one of his names. Then 21 durva are offered, two at a time, again with his names.
Few homes find all 21 leaves. Where one is missing, offer akshata in its place and say the name anyway.

The durva
Keep one durva aside from the 21. Offer the other twenty in pairs, one pair with each name, then the last one on its own with श्री महागणपतये नमः.
